This is my version of the Chicken Parmesan and Pasta that was featured on our Wine and Dine Wednesday. I have entitled my version Chicken Parmesan with Linguini. It has loads of vegetables and I did not make my own sauce, but started out with 2 jars of Ragu garlic roasted.
Ingredients needed for Chicken Parmesan:
Sauce:
2 jars of Ragu Garlic Roasted Tomato sauce
your favorite seasonings ( or Italian seasoning blend)
minced garlic,
1 pound of ground beef
1 onion
1/2 each green, red and yellow bell peppers chopped (optional)
1 pound of fresh sliced mushrooms (optional)
1 pound of italian sausage
Chicken Breasts & extras
italian bread crumbs
olive oil
1 – 3 eggs
shredded mozzarella cheese (instead of parmesan)
1 – 4 boneless skinless chicken (one per person) breast…
linguini or your favorite pasta…and
a great red or white wine

I paired this with a nice Bellarong Chardonnay. As you can see from the tasting notes, this awesome wine club sends you tasting notes that tell you where the wine came from, what you can pair it with, and the flavors that are in this wine.
How to prepare the ingredients for the Chicken Parmesan Dish:

– brown the ground beef and sausage together
– add 2 heaping tablespoons of minced Garlic
– then add the vegetables and mushrooms until cooked
– now add all of your seasonings or your blend of Italian seasoning
– then add the jars of sauce, stir and then simmer for 15 minutes

NEXT TO PREPARE THE CHICKEN BREASTS:
Preheat the oven to 350 degrees
1 – 3 eggs beaten in a bowl
1 – 4 fully thawed chicken breasts
A dish of Italian bread crumbs
Olive oil in a pan on the stove medium-high heat
Drop the breasts into boiling water until they just turn white, remove them quickly.

Next roll the breasts in the egg mixture, then roll them in the bread crumbs (fully covered) then place them into the pan of oil and lightly brown on both sides (almost searing which will raise the internal heat some more).
Once the breasts are browned, remove them and place them in a glass casserole/lasagna dish. Spread a thin layer of your sauce on the bottom.
After all the breasts are in the dish… fill in the spaces with your sauce, leaving a little of the top of each breast exposed, not submerging them.
Last step before the oven:
Then lay a heavy layer of Mozzarella cheese over the entire dish.
Cover with a top or foil and bake for 30-45 minutes @ 350.

Prepare your angel hair pasta to your liking.
Ready to serve:
Remove pan from the oven and let sit for 10 minutes, then serve one full breast on a small bed of pasta that is lightly covered with a medium serving of your sauce (optional: you can sprinkle parmesan cheese lightly on top just before serving. The Italian white wine will go great with the cheese and chicken and seasonings

My husband and I had a nice intimate dinner once he came home from work. The wine chosen went well with the cheesy meal. My husband enjoyed it. And so did I!!
Now how about dessert options? We have found a great chocolate chip recipe and an easy brownie recipe. Either would pair well with the wine you are serving for your dinner. Try a few different choices of wine and have a sampling of wines with desserts and see which you both prefer, together or separately. Our palets are all different.
