Cuban Pork, Beans and Mango Salsa An Amazing and Delicious Meal

Cuban Pork, Beans and Mango Salsa was a recipe featured on our Wine and Dine show by one of my partners. I added steamed white rice to the dish. When I made this dish and served it to my husband; he loved it (actually cleaned his plate – not a drop of food was left)!!! I chose this recipe because I liked the ingredients that were listed in this recipe. I love the flavors of the Caribbean? And I would like to visit Cuba one day!!!

Toppings to Add:

  • Lime wedges

Directions for Cuban Pork:

Preparing the Cuban Pork:

  1. Rinse off the pork shoulder and place it into the slow cooker. Then cut a few slits into the pork about an inch deep.
  2. Next measure out the olive oil. Squeeze the juices from 2 lemons, 3 limes and 2 oranges into a medium sized bowl. Then add the oregano, cumin, garlic, salt and pepper. Proceed to whisk them all together.
  3. Then pour the marinade mixture of juices over the pork roast. Also make sure some of the garlic and sauce make it into the slits on the pork. Next slice 1 more lime into small thin wedges and place them on top of the roast.
  4. Add the cut round onion slices on the top of and around the pork.
  5. Cover and cook on LOW for 8 hours.
  6. Once it is done, you will be able to shred the pork with forks and if there is a bone, it will easily be removed.

Preparation of the Beans:

  1. Measure the oil and pour it into a medium sized pot over medium heat.
  2. Saute the onions for about 2 minutes and then add the green peppers. Continue sauteing for another 2 minutes.
  3. Then add the minced garlic and black beans; stirring them together well.
  4. Next add the ground cumin, oregano, red wine vinegar and sprinkle salt to taste. Again stir well.
  5. Cook it all for about 15 mins over medium low heat. Stirring occasionally.

Preparing the Mango Salsa:

  1. Chop the mangoes, red pepper, red onion, cilantro and jalapenos. Next add them into a medium sized bowl.
  2. Squeeze the limes over the top and stir to combine.
  3. Set aside.

To achcieve tender pork that just pulls apart from the bone, cook it in a crockpost for 8 hours. That allows all the flavors to marinate with the pork and it has such great flavor once it is done.
