Zinfandel and Chipotle Pork Chops – a delicious and amazing meal of fruits and herbs!

Zinfandel and Chipotle Pork Chops

Zinfandel and Chipotle Pork Chops – a meal of fruits and herbs! That was my meal today. It was an amazing meal. The combination with my choice of wine made it a special event for a party of 1!! My husband wasn’t expected home tonight until 11pm – I was hungry and had pork chops thawed in the fridge. It was either leftovers (not really in the mood for) or something made fresh. I chose fresh tonight!!! I looked through my tasting cards for a pork pairing. It suggested a pork roast (I substituted Pork Chops) and the wine I chose was Lazy Lab Zinfandel.

The Menu/Recipe

  • Citrus Burst Kale Salad – Romaine lettuce, Kale and Frisee, Pomegranate Arils, Pomegranate Orange Vinaigrette, Orange Flavored Cranberries, Roasted Sliced Almonds
(Already prepared in a salad kit – opened the bag and mixed in a bowl)
  • Garlic and Herb Red Potatoes – (Olive Oil, Basil, Oregano, Minced Garlic, Black Pepper and Parsley)
(I put 2T of EVOO in the warm pan. Add 2T garlic. Next place the washed and quartered potatoes. Add 1T each of the herbs and sautee. Next turn down heat and put a lid on it. Let them cook about 20 minutes until potatoes are soft)
  • Chipotle Pepper Pork Chops
(Mixed flour, chipotle seasoning, seasoned salt, pepper and dipped the chops into a bag and shook, then placed the chops in to a cast iron skillet with vegetable oil heateed and fried for approximately 20 minutes on each side, then set aside to drain off excess oil)

Flavors of Zinfandel and Chipotle Pork Chops

Why was it an amazing meal? The tasting card that came with this wine said the wine smelled like baked candied black fruit! It did indeed!. The description of the Zinfandel was full & fruity and bold & beautiful just as it was described. It tasted like a dessert of fresh fruits on a summer day. The combination with the salad I chose, which also had fruit and nuts combined made the flavors pop in my mouth. The tart and sweet orange flavor from the vinaigrette and the tartness of the cranberries and the crunchiness of the almonds altogether was great!

The sips of wine in between the salad and chops made my meal a mixture of wonderful flavors and I savored eat bite. It was an event for one and made special by the ambiance of a fire in the fireplace and candles. It was a simple meal to prepare in less than 30 minutes that paired wonderfully with my choice of wine from my wine membership club.

Zinfandel and Chipotle Pork Chops

This wine was from Lodi, California – and is loaded with lush ripe aromas and flavors. It was a ruby color with notes of baked raspberry and blackberry.
